Fall and holiday flavors begin September 7th!

 

APPLE CIDER caramels: Our decadent caramel boosted with a fresh apple cider reduction and mulling spices make this fall favorite as vibrant as a second summer.
Available online 9/10

 

CHINESE 5 SPICE ganache: Sichuan peppercorn, cinnamon, fennel, clove & star anise make the traditional 5 spice, infused into a milk and dark chocolate ganache.

 

PEAR BALSAMIC:  A double treat of tangy balsamic vinegar-infused ganache and a layer of Bartlett pear pate de fruit distills one of our favorite desserts into a single confection.

 

GINGERSNAP caramel: A peppery molasses caramel delivers the sweet and zing of this favorite fall cookie.

BOUCHEES are our small chocolate-shelled confections that contain various creamy fillings, handmade in very small batches…

 

  • Maple almond praline: Our praline combines pure organic maple syrup, house made almond butter & feuilletine (Feuilletine is French for “crispy flake”) with a pinch of salt. Covered in 45% milk chocolate the center of this confection is ultra creamy, with a bit of shatter & crunch.
  • Vegan coconut-pecan caramels: Organic coconut and almond milks make this unique caramel, slightly softer than our norm. Shredded coconut and toasted pecans add texture,all wrapped in a 70% dark chocolate shell.

BLUEBERRY LAVENDER PATE DE FRUIT: Pate de fruit is a pure fruit jelly, like a larger version of the inside of a jelly bean. We make ours from fresh picked organic blueberries from Hayton Farms and local lavender, and then roll the pieces in sugar (available NOW through September 13th).

 

WALLA WALLA SWEET ONION caramel: You may wait all summer to grill these special sweet onions, but we caramelize ours! Sweet onions, beautifully burnished, meld perfectly with buttery sweet caramel. Decorated with a stripe of caramelized white chocolate and a pinch of salt and pepper (available NOW through September 13th).

 

SPICED CONCORD GRAPE PATE DE FRUIT: Organic grape puree infused with cardamom, cinnamon, nutmeg, and vanilla, and then rolled in sugar (starting September 14th)

 

SMOKED ALMOND TOFFEE – Alder-smoked almonds and sea salt in our buttery toffee, chocolate-dipped on one side & sold by the piece & pound

  • EVERYTHING BUT THE BAGEL BAR: Debuting September 7th, our take on a New York deli classic: sesame, poppy & caraway seeds, garlic salt and sweet onion sugar meld into 70% dark chocolate in a symphony of sweet and savory. Who needs the bagel?!

September 14th Beer, Cider and Chocolate Tasting for WASHINGTON ORGANIC WEEK: All organic—what better way to celebrate! All proceeds from this event will go to Tilth Producers of Washington. The tasting runs 6:30-10:30pm. Tickets are $25 for early hour entry (6:30-7:30pm) and $20 for entry at 7:30pm. Tickets available HERE.

 

October 1st: Our big collaboration with FareStart debuts, the 4-piece Theo+FareStart Mirepoix Caramel Collection, which we will sell in store, online, at FareStart and through slect retailers. More information HERE
