In addition to our regular lineup of bars, caramels, confections and treats, here’s a list of seasonal, limited edition treats for the month of October!

 

The holidays may start with trick or treating for some, but they start 3, 2, 1… NOW for us, as we release a ton of new and exciting chocolate and confections this month.

 

Theo+FareStart 4-piece Caramel Mirepoix Collection

This summer we invited a group of chef instructors and students from FareStart into our kitchen for a special chef session. The results of that day are these wonderful caramels. Mirepoix (meer-PWHAH) is the combination of onions, celery and carrots that serves as the base for soups, stocks and sauces. The Mirepoix Collection flavors: Carrot Coriander, Caramelized Onion, Celery Herb and Bay Fennel.

 

$1 from every box sold will benefit FareStart’s culinary job training program, and we couldn’t be prouder of this project. (Available in store, at select retailers, at the FareStart café and online)

 

CONGO Pili Pili Chili & Vanilla Nib Bars

Theo Chocolate and Eastern Congo Initiative (ECI) have teamed up with Congolese cocoa farmers to make these incredible bars. The cocoa, chilis and vanilla used to make this chocolate bar are all grown in Eastern Congo by dedicated organic farmers focused on quality and sustainability. Proceeds from these chocolate bars will be donated to ECI to support their work with Congolese farmers in Eastern Congo. HALLOWEEN is one of the few holidays we offer our hand decorated THEO MARSHMALLOWS! Dipped in 45% Theo Milk chocolate, this year's selection features scaredy cats, ghosts & funny face pumpkins! We also make small batches of hand poured chocolate shapes: SPOOKY SKULLS for Dia des los Muertos done in dark chocolate with white chocolate eye balls and SPIDER shapes in dark chocolate. (Available in our retail store only).

 

FALL & HOLIDAY flavors….

 

APPLE CIDER caramels: Our decadent caramel boosted with a fresh apple cider reduction and mulling spices make this a fall favorite. (Also available in select retailers and online: Click here)

 

CHINESE 5 SPICE ganache: Sichuan peppercorn, cinnamon, fennel, clove & star anise make the traditional 5 spices which we infuse into a milk and dark chocolate ganache.

 

PEAR BALSAMIC:  A double treat of tangy balsamic vinegar-infused ganache and a layer of Bartlett pear pate de fruit distills one of our favorite desserts into a single confection.

 

GINGERSNAP caramel: A peppery molasses caramel delivers the sweet and zing of this favorite fall cookie. (Also available in select retailers and online: Click here)

 

COCONUT CHAI: Creamy coconut blends with warm and spicy chai tea for a smooth and satisfying Vegan treat!

 

BOUCHEES are our small chocolate-shelled confections that contain various creamy fillings, handmade in very small batches. (Available in our retail store only).

 

·       Maple almond praline: Our praline combines pure organic maple syrup, house made almond butter & feuilletine (Feuilletine is French for “crispy flake”) with a pinch of salt. Covered in 45% milk chocolate the center of this confection is ultra creamy, with a bit of shatter & crunch.

·       Vegan coconut-pecan caramels: Organic coconut and almond milks make this unique caramel slightly softer than our norm. Shredded coconut and toasted pecans add texture, all wrapped in a 70% dark chocolate shell.

 

 

CONFECTIONER’S CHOICE

Small batches & limited availability in our retail store only. With so many talented and creative people on staff, we need an outlet for all the incredible ideas!

 

SPICED CONCORD GRAPE PATE DE FRUIT: Organic grape puree infused with cardamom, cinnamon, nutmeg, and vanilla, and then rolled in sugar (starting October 5th)

 

CANDY APPLE: Caramel-flavored ganache and tart apple pate de fruit, coated in dark chocolate and topped with candied pecans (starting October 5th)

 

SMOKED ALMOND TOFFEE – Alder-smoked almonds and sea salt in our buttery toffee, chocolate-dipped on one side & sold by the piece & pound

 

And don’t forget we also sell our COCOA NIBS—candied or roasted—by the pound in the factory store! (roasted nibs also available online here)

 

 

Special Chocolate Bars

 

Our 1oz Bars : Big flavors in small packages…

 

·       EVERYTHING BUT THE BAGEL BAR: 70% dark chocolate with the flavorings of an “Everything Bagel:” caraway, poppy & sesame seeds, garlic salt and onion sugar—our homage to the New York deli .(also available online here)

·       MOON BAR: Once in an… October we satisfy white chocolate lovers with our scary rich and creamy 1oz white chocolate bar. (Available in-store while supplies last!)

·       GHOST CHILI BAR: This 1oz bars has a very loyal following, and gets a special ghostly label this month! Our 70% dark chocolate infused with some of the hottest chilis on earth, with a little salt and orange zest for balance. (Available while supplies last! …also available online here)

·       COFFEE AND CREAM: This bar combines creamy milk chocolate with a fine grind of our special Theo + Caffé Vita blend of coffee. A deliciously coffee-centric Cafe Mocha in bar form! (Also available online here)

 

 

AND OUR NEW VEGAN CONFECTION, which is currently being determined by in-store tasting and voting. We’ll share the results soon!
